Protecting my weight loss by baking these as dessert for the family… 

🍪🍪🍪1. Lotus biscoff, banana, nutmeg and cinnamon 3syns a slice 🍪🍪🍪🍪

Ingredients – 

Total of 24 Syns divided in 8 slices – 3 syns slice

Cake

4 Medium eggs 

1 tbsp baking powder (1syn) 

3 tbsp sweetner (2 syns) 

1/2 tub of quark

50g of an old banana (use older ones for a sweeter cake (2syns)

1 tsp of cinnamon powder 

1 tsp of nutmeg 

4 tbsp of lotus biscoff spread (16 syns) 

1 biscoff biscuits (1 syns) 

12g of self raising flour (2 syns) 

Preheat oven to gas mark 4-5 / 150-180c. 

To make …. 

1.. separate the eggs in two bowls- whites in one, yolks in the other. 

2.. with the egg yolks add the baking powder, sweetner, quark, cinnamon, nutmeg and one tablespoon of biscoff and mix with a electric whisk. 

3.. whisk the egg whites into stiff peaks.. you should be able to turn your bowl upside down and the whites stay where they are. If they move whisk a little more. 

4.. with a fork squash the banana, so it’s mashed consistency (this helps release the sugar)  

5.. add banana and flour and whisk. 

6.. tip the egg whites into the yolk mixture and fold in using a metal spoon, or rubber spatula 

7 line a tin with greaseproof paper. 

8.. pour in mixture and very gentle spread out evenly, don’t tap the the tin on the worktop otherwise the air will fall out.. 

9.. bake in the middle of the oven for around10-12 mins.. (check it’s cooked like a regular cake by popping a knife in the middle) if you see it is catching a little on the top.. Simple’s turn it down to a lower heat of 4 till it is slightly firm to touch. 

Once cooked and cooled… USE A PROPER MEASURING SPOON OTHERWISE YOU MAY OVER GO YOUR SYN ALLOWANCE 

8…measure out 2.5 tablespoons of biscoff and gently spread over the top of the cake. 

9…roll the cake up and top with melted biscoff (1/2 teaspoon) 

10… crush the lotus biscuits in a bag with the end of a rolling pin and sprinkle on to decorate. 

11. make a lovely cup of tea and enjoy a piece of cake that won’t make you put on weight. 

If you wanted to treat yourself you could serve with a custard or very small amount of ice cream. Both of which would need to synned. 

2. Raspberry roulade 6 syns whole cake 🍓🍓🫐🫐

Ingredients:

250g tub of any Quark

4 Eggs

1 Tsp baking powder

2-3 drops of vanilla essence.

3 Tbsps of sweetener

A tray of raspberries (also works well with strawberries or any other syn free fruit)

Method:

Preheat the oven to 180 degrees

Separate the eggs into yolks into one bowl, and the whites into another.

Whisk together a half tub of quark with the yolks, baking powder, sweetener and vanilla essence.

Whisk egg whites until they form soft peaks.

Slowly add the whisked egg whites into the yolk mixture.

Line a rectangular oven tray with baking paper and spray with plenty of frylight

Carefully pour the mixture so that it lines the tray evenly.

Cook for 10 minutes or until golden brown. Remove from the oven and allow to stand for 4-5 minutes.

Peel baking paper from the cake and allow to cool fully. While this is cooling, mix the remainder of the quark with another drop of vanilla essence.

Evenly spread the quark and fruit over the cooled cake.

Gently roll up the cake into a roulade. Cut into slices as generous as you would like!

3. Lemon 🍋 ice 4 syns whole cake🍋🍋🍋🍋🍋🍋

Ingredients:

250g tub of any Quark

4 Eggs

1 Tsp baking powder 0.5 syns 

2 whole lemons (small/medium size… 1 large one)

3 Tbsps of sweetener 1 syn 

3 tbspn of icing sugar powder (truvia) 1.5syn 

Method:

Preheat the oven to 180 degrees

1. Slice a Lemon in half and squeeze out the juice from both halves. 

2. Separate the eggs into yolks into one bowl, and the whites into another.

3. Whisk together a half tub of quark with the yolks, baking powder, sweetener and lemon juice. 

4. Whisk egg whites until they form soft peaks.

Slowly add the whisked egg whites into the yolk mixture.

5. Use the outer part of the lemon, and grate it on a zest part of the grater. Don’t grate the white bit just the yellow lemon zest. Add to the cake mix. 

6. Line a rectangular oven tray with baking paper and spray with a few sprays of butter flavour frylight

7. Carefully pour the mixture so that it lines the tray evenly.

8. Cook for 10 minutes or until golden brown. Remove from the oven and allow to stand for 4-5 minutes.

9. Peel baking paper from the cake and allow to cool fully. 

10. While this is cooling, mix the remainder of the quark with half a lemon squeezed fresh juice. Use the larger grater side to grate the lemon zest from the outer skin. 

11. Add 2tbspn of truvia icing sugar to the quark and lemon juice and zest. 

12. Mix and spread all over the cooled base. 

13. Gently roll up the cake into a roulade. 

14. Mix a few drops of lemon juice with 1tbsp of truvia icing sugar and grate some more lemon 🍋 zest on it. Drizzle or use a pallet knife to spread over the top of the your lemon cake.
