This recipe was a throw together, use up dinner as I forgot to get something out of the freezer so i went off plan.
Normally is stick to a weekly meal plan that is stuck on my fridge….this really helps my husband as he can see what we are eating each day and looks forward to dinner. This is helpful when he craves food during the day (he works from home) x

Ingrédients

Red onion, garlic, leek, grated courgette, grated carrot, brocoli, passata, tomato puree, chopped cooked turkey breast, black olives (in brine) veg stock cube, water, tricolour lentil pasta, salt and pepper, low fat cheese on top.

Precook pasta and steam brocoli.
Soften onion and leek with garlic in the pan with frylight.
Add grated carrot and courgette.
Add passata and tomato puree.
Add turkey
Add pasta and brocoli
Add stick cube and a little water to get to the correct consistency….not too wet but also not stodgy.
Stir all together
Sprinkle cheese and pop in oven for 15 mins until golden.
